Make the filling ahead of time and fill s
quash about an hour ahead of time. I used orange jam/preserves because I didnt have the juice (the orange taste was real good with the squash) and raisins instead of apricots.
nuts, fruit, wild rice, quinoa, squash, orange, onion, and almost no fat. Im just saying- that is a balanced meal!

Or...you can go in to the back yard, grab a couple fistfuls of dirt (I'm talking the good stuff here...like an organic gardening mix), and munch away.
Easier to prepare, just as nutritious, and tastes almost identical.

I am glad Ben does not cook in our home.Ha! This sounds yummy. I think the orange substitute sounds delish. You take very cool pix. Glad you are up and running.
