To be honest, I don't even use a jar with cheese cloth. I soak the beans overnight and leave them in a bowl with loose cover, out of direct sunlight for three days. I rinse them two to three times a day until they sprout to desired length. To store I dry them out a bit and then into the fridge. EASY and good to munch on.

I used to sprout and I love sprouts of all kinds, wheat grass, barley, bean etc. are the ones I did. But as of late I have heard of folks getting sick from sprouts from the stores. Any info on that? I emailed the sprout people on the link you posted. Love this Wynn.
I did read about store bought sprouts and e. coli I believe. Home-grown sprouts shouldn't have that risk. The risk I foresee would be mold if you aren't draining and rinsing the beans.
