Tofu

I began eating tofu when I started getting "Vegetarian Times." Vegetarian food uses a lot of tofu and so it was inevitable. I don't mind soy taste (aka soy milk) but tofu was always just blah. Until I read that the key to tofu is draining it properly

For every tofu recipe (except maybe a smoothie):
Drain liquid from tofu package (if any). Wrap the tofu block in several paper towels or a clean dish clothe. Put something heavy over it (like a cast iron lid) and let it drain for at least 10 min, 30 would be better. 

 That step, along with plenty of seasoning, will make tofu a good ally in cooking. 

Another interesting thing to do to tofu is to freeze it (in package). When you defrost it, it has a spongy texture and absorbs liquid well. A little odd, but fun?

Ah ha. I always have drained the tofu but have not tried any other steps. This would help our stir fry be a lot better I think. Good tip!

FANTASTICO! COOL WYNNY, I LOVE THIS BLOG. THANKS FOR CREATING IT. A FEW QUESTIONS...FREEZING, DO YOU MEAN FREEZE IT JUST AS YOU BUY IT IN THE LIQUID OR AFTER YOU HAVE DRAINED THE LIQUID FROM IT...AND IS THERE WORRY OF CONTAMINATION/BACTERIA WHILE LEAVING THE TOFU OUT TO DRAIN?

You can freeze it just as you buy it, without opening the package. As far as contamination...I haven't run into any problems, its not meat so there isnt an sort of risk of salmonella etc. To be sure just make sure the paper towels/dish clothe is clean.

Connie just made a chocolate cream pie with tofu and chocolate chips instead of pudding and milk. It was quite tasty. Nice blog.

i have to set the record straight on salmonella. i just learned this in bacteriology: salmonella enterica has over 2400 serotypes and can be found on any of the following--pigs, rodents/feces, cattle, pets such as a turtle, iguana, parrot; eggs, found in soil, water, fertilizer, water is main source of big epidemics, raw milk, powdered infant formula, shellfish (filter feeders); eggnog, ice cream, meats, runny omelets, recreational drugs, toads, and cantelopes, and more...
