And when its cold and snowy, this little babe hates going outside. We spent 15 minutes bundling her to the point of paralysis and as soon as the wind hit her face she let us know that she was not enjoying the outdoors.
So, we stayed in and made parsnip gnocchi.
I thought gnocchi would be really hard to make, but it you dont care how it looks, it's not too bad. 1 lb boiled parsnip (traditionally potatoes) are pureed with 1/2c parmesan, salt, nutmeg, and 1c flour. Add ab 1/2c flour until a dough forms. {This is where it got tricky for me, I think I added too much flour because the dough was super sticky. Next time, I will stick to no more than 1 1/2c and then generously flour my rolling surface.} Gently knead a few times and roll into a 1/2inch log. Cut off 1 inch pieces and drop into boiling water. They will float when ready. Serve with any sauce or just some butter/cheese.
Mine were probably not as delicate or fluffy as they could have been, but they were fun to eat. Will definitely make again.
