Kale Salad
My mom made this for me after I had Acadia. She was worried about my iron level. We ended up eating it 7 times in a row. It never gets old. Salty, tangy, savory, chewy, and satisfying.
I think she adapted it from this recipe: Esalen Kale Salad
The dressing is equal parts lemon juice, olive oil, tamari (or soy sauce) and a couple crushed garlic cloves. The dressing should be very strong- tart and salty. Toast a handful each of seeds: sunflower seeds, sesame seeds, pumpkin seeds, etc. Add everything to one bunch cut Kale.
I ate half of this salad for dinner last week. And I still want more.
I love this salad. Like Acadia loves this cat.

i think you meant tamari, not tahini--that could turn it into a hummus kale salad.
by the way, you ate the whole salad this week, not half.
and that pic of acadia makes her head look huge. it isn't.
